We Make Things from Scratch
Seriously. No, we don’t get a bunch of frozen dough and roll it out and call it scratch, because that would be wrong. We make pizza dough from flour and yeast and beer. And we stuff our own sausages. We even pickle our own peppers. We cook food because we LOVE food. And we’re betting that’s why you love it and why you’re here. Welcome to the team.
You know what it’s like to have that burning flame inside of you that whispers be more, do more, go, go …? Michael Larson, owner of Digbys, does. He started as a young pup in the salad station of Pronto Ristorante, fresh out of culinary school. It wasn’t long before he was Chef and GM of the place. But it wasn’t enough. During the food boom, Michael rose through the ranks of Parasole, helming many kitchens and crafting lasting relationships with other cooks. As opening Chef/GM of Chino Latino, he met another young pup in Jeff Anderson, a fresh graduate of the California Culinary Academy. The two found they worked well together, with a like-minded drive, so when Michael’s eventual role as VP Culinary led him to choose an Executive Chef for the new Salut on Grand, it was a no-brainer.
